Brewery & the Beast celebrates the outdoor roots of the festival by giving chefs free-reign to be bold and creative when preparing their exceptional dishes over open fire. More than 60 of the city’s top chefs showcase their culinary talent, exhibiting traditional and modern techniques, with a focus on live-fire cooking. Chefs will be grilling, braising, searing, smoking, and engaging in unique large-format cooking methods as well as whole animal roasts. Only the finest ingredients, including: beef, bison, pork, lamb, goat, wild boar, chicken, elk, rabbit, duck and fresh local produce, are served at Brewery & the Beast. All of the proteins sourced for the event are ethically and responsibly raised, and come from small Canadian farms and ranches who raise their animals sustainably, with care and transparency.
